Blackcurrant Jam

Quantities

2 lb blackcurrants 2 pint water
4 lb granulated sugar

Method

Remove any stalks from the currants and wash them.

Drain and put in a pan with the water. Simmer gently until the currants burst and are soft.

Be careful not to let it boil or too much of the water will boil off and make the jam very stiff.

Add the sugar and proceed as usual.

This keeps well but tends to get a little stiff over time.
